About
My research centers on the functional characterization, valorization, and formulation of food-derived proteins and peptides for health-promoting applications. Expertise bridges food chemistry, protein & peptide, and nanobiotechnology, focusing on how structural transformations of proteins during processing and digestion influence nutrient bioavailability and bioactive peptide generation. I have experinced to developed in vitro digestion models (INFOGEST) and applied advanced analytical and spectroscopic tools such as FTIR, UV, NIR, XRD, SEM, DLS, and rheology to elucidate protein structure–function relationships at molecular and macroscopic levels.
I have extensive experience in proteomics, peptidomics & metabolomics, using LC-MS/MS, QTOF-MS, and HR-LC/MS platforms coupled with bioinformatics tools (MaxQuant, Perseus, STRING, Cytoscape) to identify and characterize bioactive peptides/ metabolites with antidiabetic, antiobesity, and antimicrobial properties. His work integrates in silico prediction and molecular docking to assess peptide–target interactions, complemented by metabolomics and cell-based assays (HT-29, C57BL/6J mice models) for functional validation.
I have also designed nanostructured food systems including whey protein nanoparticles, cellulose nanofibers, and peptide-based nanocomposites to enhance stability, controlled release, and bioavailability of functional ingredients. My research promotes the sustainable utilization of dairy side streams, transforming industrial by-products into high-value bioactive compounds for next-generation therapeutic and functional food formulations.
