About

I am a researcher in Food Science and Technology with strong academic and applied experience in post-harvest technology, food processing, and functional food development. I hold a Doctor of Philosophy (Ph.D.), with my doctoral research focused on the extraction and microencapsulation of bioactive compounds from food waste and their application in functional foods, contributing to sustainable food waste valorization and health-oriented product innovation.

My research interests include post-harvest handling and quality management of agricultural produce, non-thermal processing technologies, drying and preservation methods, functional ingredient development, microencapsulation, and sustainable utilization of agri-food waste. I have hands-on experience in physicochemical, nutritional, and antioxidant analysis, product development, and shelf-life studies.

Previously, I completed my M.Sc. research on the quality of sweet potato flour as affected by pre-treatment and drying methods. I am currently working as a Junior Research Fellow (JRF) in a DST-TDP project, where I am engaged in translational research with strong industry and societal relevance. I am keen on interdisciplinary collaborations and translating scientific research into scalable, sustainable solutions for the agri-food sector.
