About
Irshad Ahmad Shah is a Research Scholar at Pondicherry University in the Department of Food Science and Technology, School of Life Sciences, with a specialization in Food Microbiology and Biotechnology. Since 2018, my research has focused on exopolysaccharides (EPS) derived from lactic acid bacteria isolated from fermented food sources. My work encompasses their valorization in various techno-functional applications, scaling up production processes, and optimizing downstream processing for industrial applications.
Currently, I am exploring the modification of EPS through physical and chemical means to enhance their functional properties. My research also involves investigating their potential applications in food coating and packaging, as well as their role as prebiotics and other functional food ingredients, with a strong emphasis on practical implementation in the food industry.
