About
I am Dr. Suman Talukder, Senior Scientist in the Division of Livestock Products Technology (LPT), ICAR–Indian Veterinary Research Institute (ICAR-IVRI), Izatnagar, Bareilly, Uttar Pradesh, India. I have been serving at ICAR-IVRI since 2010 and have over 15 years of research experience in meat science and food technology. I obtained my Ph.D. in Livestock Products Technology from ICAR-IVRI in 2018.
My research focuses on meat processing and preservation, intelligent and smart packaging systems, freshness sensing technologies, natural dye-based meat quality indicators & time temperature indicator, food safety, and value addition of livestock by-products. I am particularly interested in the development of clean-label, sustainable, and functional food products, including bioactive ingredients derived from animal and plant biomass. My recent work involves natural dye anthocyanin and betalains-based freshness and temperature probes for poultry meat, decontamination technologies, developing protein hydrolysates from poultry byproducts, and and the utilization of agro-industrial and animal by-products for value-added applications.
I have published more than 70 peer reviewed-research articles, 15 book chapters, 6 review article, 2 books, and more than 20 technical articles, and I actively contribute to postgraduate teaching, research supervision, and institutional academic activities. My current research also explores 3D-printed functional foods, marine biomass-derived cryoprotectants and pigments, and circular bioeconomy approaches for food system sustainability.
My future research interests include clean-label functional foods, 3D food printing, marine biomass-derived bioactive ingredients and natural pigments, intelligent food manufacturing, AI-assisted food quality assessment, and circular bioeconomy approaches for the sustainable utilization of food and livestock processing by-products. I am keen to establish international collaborations that translate these emerging technologies into sustainable and industry-relevant food innovations.
Through my ORCID record, I aim to maintain a transparent and accessible record of my scholarly contributions, collaborations, and ongoing research activities in the fields of livestock products technology, food innovation, and sustainable nutrition.
