About
Food powder development has gained popularity considering its shelf life, convenience and multidimensional use. Sugar rich foods are difficult to spray dry due to the low glass transition temperature. My focus of research is to develop fruit juice powders using spray drying techniques. Rehydration characteristics play a vital role in acceptance of the product. So, rheological characterization of the rehydrated product would provide information for a suitable optimum formulated fruit juice powder.
